Jewish Apple Cake

Ingredients

  • 3 cups flour, unsifted
  • 2 cups sugar
  • 1 cup vegetable oil
  • 4 eggs
  • ½ cup orange or pineapple juice
  • 2 ½ teaspoons vanilla extract
  • 3 teaspoons baking powder
  • 3 - 4 apples, peeled and sliced
  • cinnamon, to taste

Method

1. Place first 7 ingredients into a bowl in order given. Beat until smooth. Place half of batter into a greased tube pan. Arrange apple slices on top of batter. Sprinkle with cinnamon and additional sugar. Pour in the rest of the batter and repeat apple slices and cinnamon and sugar. Bake in a 325 degree oven for about 1 hour and 30 minutes.
2. Yield 18 slices.
3. We find this recipe is better if you use more apples.
