Mi Mi's Pumpkin Cookies

Soft, moist cookies with a wonderful autumn taste.

Ingredients

  • 2 cups sugar
  • 2 cups butter
  • 15 ounces pumpkin, canned, (1 can)
  • 2 egg
  • 4 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons vanilla
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • 12 ounces semi-sweet chocolate chips, optional
  • 1 cup brown sugar
  • 6 tablespoons butter
  • 6 tablespoons milk
  • 1 teaspoon vanilla
  • 2 cups powdered sugar

Method

1. For the cookies:
2. Beat sugar and butter until creamy. Mix in pumpkin and eggs. Add dry ingredients a little at a time. Stir in chocolate chips (if using).
3. Refrigerate the dough until firm. Drop on cookie sheet and bake 15-20 minutes until brown on the bottom.
4. For the icing (if using):
5. Combine butter, brown sugar, milk and vanilla in a microwave-proof bowl. Microwave until melted and stir. Beat in powdered sugar and ice the cookies.

Notes

If you are using the chocolate chips, omit the icing and vice-versa, otherwise it's too sweet.
