Ingredients
- 4 apples, (equal to 2 pounds) peeled, cored & chopped
- 1 cup fresh cranberries, picked over
- ½ cup sugar
- ¼ cup apple juice
- 1 cinnamon stick, 3 inches in size
- 1 lemon zest, 3 inch strip
- 2 tablespoons butter
Method
In a heavy saucepan cook the apples, cranberries, sugar, applie juice, cinnamon stick and lemon zest over moderate heat. Stir often for 15 minutes or until the apples are soft. Discard the cinnamon stick and zest, and mash the mixture to desired consistency (can be forced through medium disk of food mill if smooth consistency is desired). Stir in the butter.
Can be served warm or chilled. Can be kept in the refrigerator for 1 week.
