Grandma Mulcahy's Irish Soda Bread

Ingredients

  • 3 ½ cups flour, sifted
  • cup sugar
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 ½ cups seedless raisins
  • 1 teaspoon caraway seeds, optional
  • 1 ½ cups buttermilk
  • 2 tablespoons butter, melted
  • 2 eggs, beaten
  • ½ teaspoon cream of tartar

Method

1. Sift dry ingredients together. Add raisins and caraway seeds to flour mixture. Add buttermilk and melted butter to beaten eggs. Add mixture to flour mixture, combine well. Pour into greased loaf pan. Bake at 375 degrees farenheit for 1 hour (or until done). Makes one loaf.
2. SUGAR-FREE VERSION: Omit sugar and replace with 5 teaspoons Equal for Recipes. Works great!
