Easter Calzone


  • Dough:
    • 1 cake compressed yeast
    • 1 cup water, lukewarm
    • 4 cups flour
    • 1 teaspoon salt
    • 2 teaspoons vegetable oil
  • Filling:
    • 2 pounds ricotta cheese
    • 2 pounds Italian sausage
    • 6 eggs
    • ½ cup romano cheese
    • ½ cup parsley, minced
    • salt & pepper, to taste


1. Dough: Dissolve yeast in water. Make a well in the flour and pour in yeast mixture. Add salt. Knead 10 minutes. Add oil and knead until smooth. Place in bowl and cover with wax paper and towel and let rise for about 2 hours. Roll dough in well-greased baking pan (15×11x3″). Leave some dough for criss cross on top of the pie.
2. Filling: Cut sausage into 1/2″ pieces, fry until brown in large skillet. Remove from pan, drain on paper towl. Meanwhile cream ricotta in a large bowl and add eggs one at a time. Blend well. Add parsley, salt and pepper, mix in sausage.
3. Pour filling into shell and top with criss-cross of dough. Bake at 350 degrees for 45 minutes to 1 hour or until knife inserted comes out clean.
