Ingredients
- 1 pie crust
- 2 boxes frozen chopped spinach
- 2 eggs, beaten
- 1 can cream of mushroom soup
- ¼ cup flour
- 1 tablespoon onion flakes
- 1 teaspoon mustard
- 1 can corned beef hash, 15 ounces
- 1 cup american or cheddar cheese
- 2 tablespoons pimento, chopped (optional)
- 1 tablespoon horseradish
Method
Prepare crust- prick bottom and sides and bake at 450 for 10-12 minutes.
Cook spinach. Drain well. Combine eggs, soup, flour, horseradish, mustard, and onion flakes.
Spread hash in baked shell. Spoon spinach mix over hash. Bake uncovered at 350 for 45 minutes. Combine cheese and pimento, sprinkle over pie. Bake 2-3 minutes longer.
